Sweet Potato Soup
A delicious twist to a sweet potato
1 (14-ounce) package smoked sausage, sliced
1cup of diced onion
1 tbsp of minced garlic
6 cups chicken broth
2 cups mashed sweet potato
1 teaspoon dried thyme
1 teaspoon cayenne pepper
3 cups baby spinach
1.In a Dutch oven, cook sausage over medium heat until browned. Remove and set aside.
2. Add onion to the Dutch oven and cook for 5 minutes.
3. Add garlic and cook for 1 minute.
4. Add chicken broth, sweet potato, thyme, and cayenne pepper. Simmer for 15 minutes
5. Add sausage back and simmer 5 minutes.
6. Stir in spinach
