Ingredients:

- 1 cup shredded rotisserie chicken

- 2 cans of butter beans, drained

- 2 cups chicken broth

- 1 cup heavy cream

- Fresh oregano, chopped (to taste)

- 2 tbsp butter

- 1/4 cup sun-dried tomatoes, chopped

- 1 cup spinach, roughly chopped

- Salt (to taste)


Instructions:


1. Prepare the Base:

- In a large pot, melt the butter over medium heat. Add the chopped onions and sauté until they become translucent, about 5 minutes.

- Add the minced garlic and sauté for another minute until fragrant.


2. Add Liquids and Beans:

- Pour in the chicken broth and bring to a simmer. Add the drained butter beans and continue to simmer gently, allowing the flavors to meld together, for about 10 minutes.


3. Season and Simmer:

- Stir in the sun-dried tomatoes, a pinch of crushed red pepper, black pepper, and salt to taste. Keep the mixture simmering on low heat.


4. IncorporateCream and Chicken:

- Reduce the heat and stir in the heavy cream, mixing well. Add the shredded rotisserie chicken, and continue to simmer for another 5-7 minutes, ensuring the chicken is heated through.


5. Add Greens and Herbs:

- Just before serving, add the chopped spinach, fresh basil, and oregano. Cook until the spinach is just wilted, which should take about 2 minutes.
