Sweet Potato Pie Simple Syrup

Ingredients:
1½ cups water
1½ cups sugar (white, brown, or a mix for deeper flavor)
½ teaspoon vanilla extract
½ teaspoon ground cinnamon (or 1 cinnamon stick)
½ small sweet potato, peeled, sliced, and partially cooked (microwave 2–3 minutes until fork-tender)
Instructions:
1. Prepare the Sweet Potato:
Slice the sweet potato thinly and microwave until just tender, not mushy.
2. Make the Syrup:
In a saucepan, combine the water and sugar. Bring to a gentle simmer over medium heat, stirring until the sugar dissolves.
3. Add Flavor:
Add the vanilla extract, cinnamon, and sweet potato slices. Reduce heat and simmer 10–15 minutes, stirring occasionally.
4. Strain:
Remove from heat and let it cool for 10–15 minutes. Strain out the sweet potato slices (you can save them for another use).
5. Bottle:
Pour into a clean glass jar or bottle.
Storage
Because it’s made with fresh sweet potato (even though removed), refrigeration is recommended.
Homemade syrups without preservatives can develop mold or fermentation at room temperature.
Shelf life in refrigerator: about 2–3 weeks.
