A great addition to your charcuterie board, burger or sandwich.
Ingredients
2 12 ounce packages bacon
2 cups of diced white onions
1/2 tbsp minced garlic
2 sprigs fresh thyme (or 1 teaspoon dried thyme leaves)
1/4 teaspoon all-spice
1/2 teaspoon ground rosemary
1/4 cup brewed coffee
1 tbsp worchestire sauce
1/4 cup balsamic vinegar
1 cup packed light brown sugar
1/2 cup Jack Daniel Honey whiskey
1/2 stick of butter
Directions
1. Cut the bacon slices into small pieces
2. Heat a large skillet over medium heat, then add the bacon to the pan.
3. Once the bacon is crispy, remove it from the pan using a slotted spoon. Drain all but 4 tablespoons of the bacon fat from the pan, then return the pan to the stove. 4. Over medium heat sauté the dicef onions, stirring occasionally, for 5 minutes.
5. Add the minced garlic to the onions and continue to sauté for 5 more minutes.
6. Strip the leaves from the thyme stems and add them to the pan along with the ground rosemary, and the all-spice.
7. Stir in the coffee, balsamic vinegar, worchestire sauce and half of brown sugar. Bring the mixture to a simmer and cook for 5 minutes to further caramelize the onions.
8.Add whiskey to mixture. Cook and stir often for 10 more minutes. Remove from heat.
9. Add bacon to onion mixture. Mix well.
10. Enjoy! Serve as desired, either cold or warm
