Sweet Potato Brownie


For the Brownies:

- 1 cup cooked and mashed sweet potato

- 1/2 cup unsalted butter, melted

- 1/2 cup brown sugar

- 1/4 cup granulated sugar

- 1 teaspoon vanilla extract

- 2 large eggs

- 1 cup all-purpose flour

- 1 teaspoon baking powder

- 1/2 teaspoon cinnamon

- 1/4 teaspoon nutmeg

- 1/4 teaspoon salt

- 1/2 cup chopped pecans (optional)

For the Topping (Optional):

- Powdered sugar for dusting

- Additional chopped pecans


1. Preheat the Oven:

Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking dish or line it with parchment paper.

2. Mix Wet Ingredients:

In a large bowl, whisk together the melted butter, brown sugar, granulated sugar, and vanilla extract. Add the eggs and whisk until smooth. Stir in the mashed sweet potato.

3. Combine Dry Ingredients:

In a separate bowl, mix together the flour, baking powder, cinnamon, nutmeg, and salt.

4. Combine Wet and Dry Ingredients:

Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Avoid overmixing.

5. Add Pecans:

If using, fold in the chopped pecans.

6. Prepare the Batter:

Pour the batter into the prepared baking dish, spreading it out evenly.

7. Bake:

Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean or with a few crumbs.

8. Cool and Serve:

Let the brownies cool in the pan. If desired, dust with powdered sugar and sprinkle additional chopped pecans on top before serving.
