Caribbean Crab Cakes

Wet Ingredients

- 1 whole egg, beaten

- 1/3 cup mayonnaise

- 1 tablespoon Dijon mustard

- 3 tablespoons finely chopped mango and pineapple

- 2 teaspoons Worcestershire sauce

- 1/2 teaspoon black pepper

- Kosher salt, to taste


Dry Ingredients

- 1 lb jumbo lump crab meat

- 1 1/4 cup panko breadcrumbs

- 1 tablespoon Caribbean jerk seasoning

- 3 tablespoons green onions, finely sliced


For Frying

- Olive oil


Instructions

1. Prepare the Wet Mixture:

- In a small bowl, whisk together the egg, mayonnaise, Dijon mustard, chopped mango and pineapple, Worcestershire sauce, black pepper, and a pinch of kosher salt until well combined.

2. Prepare the Crab Mixture:

- In a medium bowl, gently flake the crab meat, being careful to remove any shell fragments. Add the panko breadcrumbs, Caribbean jerk seasoning, and green onions to the crab. Toss lightly to combine without breaking the crab meat too much.

3. Combine Wet and Dry Mixtures:

- Add the wet ingredients to the crab mixture. Using a fork, gently mix until everything is well incorporated.

4. Form the Crab Cakes:

- Using an ice cream scooper, scoop the mixture and press it into a "hockey puck" shape within the scoop or a small ring mold. Press just firmly enough to hold the shape. Repeat until all the mixture is used, making about 8 crab cakes.

5. Chill the Crab Cakes:

- Place the crab cakes on a tray and refrigerate for 15-20 minutes to firm up before frying.

6. Cooking:

- Heat a large skillet over medium heat and add enough olive oil to coat the bottom. Once hot, fry the crab cakes in batches of 3-4, cooking each side until golden brown, about 2-3 minutes per side. Use a spatula to carefully turn the crab cakes to avoid breaking them.

7. Keep Warm:

- As they are cooked, transfer the crab cakes to a paper towel-lined tray and keep them warm in a 200°F oven while you fry the remaining batches.

8. Serve:

- Serve the Caribbean Crab Cakes hot, garnished with additional green onions or a side of tropical fruit salsa if desired.
